Glaze BEFORE flipping cake out of pan? So glaze will be on the bottom?

Sandy...I was wondering the same thing? Why is the glaze on the bottom?

I guess if you waited to pour the glaze over the cake when it cooled then it would not absorb as good as when hot.

Pour over cake while hot then let cool in the pan. The glaze sinks into the hot cake

Can you make it without the wine?

Pouring the mixture on the bottom of the cake is called "syruping" the cake. Very common in French baking. A glaze is what is put on top. Generally, the sauce is one c. Granulated sugar, one cup water, cooked til sugar melts. Called simple syrup. Cool befor use. Susan, certified pastry chef

Cette recette contient trop de sucre. Reduire! La prochaine fois, je ne mettrai pas de sucre dans le gâteau, j'en mettrai juste pour le glaçage, et ça beaucoup moins!

What could be used instead of wine?

Apple cider can be used in place of wine. But alcohol cooks out of the wine when cooked. If that was the concern.

Very disappointed ! Weird flavor. Maybe was the wine?

Sweet wine like Sherry or Marsala should be specified, and I agree that the sugar is overkill. Save it for the syrup.

Water with rum extract instead of wine might be yummy. I also wouldn't add sugar to the cake mix...or the cinnamon if using the rum flavoring.

Made this cake, followed recipe exactly and it was a huge hit! Some of the"glaze" soaks into the cake but also leaves a little crunchiness on the bottom. We're not really wine drinkers but happened to have a bottle of Muscadine wine. Was a little apprehensive but it was delish!
